Gluten Free, Diary Free, Low Glycaemic tasty pancakes. Great breakfast option. Can be made in 10 mins. Particularly suited to those who are insulin resistant or have many food allergies.
1 Cup of almond Flour
1/4 Cup of favourite plant milk or water
1 -2 eggs (organic free range)
Baking soda 1tsp
Pinch of salt
1 tsp vanilla essence (optional)
1 tbsp of Maple syrup (optional)
Coconut fat for cooking
Whisk all ingredients together until smooth. Use Coconut fat on pan and pour batter on. Can be dressed with lemon juice and a little honey. Honey has great antibacterial properties but not suitable for heating. Can also top with a little butter for savoury choice.
Protein rich, calcium rich free from breakfast option. Suitable for occasional breakfasts.
